I first got to know about Sage, The Restaurant from Sunday Times. They had interviewed several chefs from well-known restaurants in Singapore. One of the questions asked was where they would dine when they are not working. Many responded with "Sage"!
After waiting for several months, I finally found the right occasion to make a visit! It was LN's birthday, so we booked a table for 3 (including WM!).
All of us were very impressed with the food. The service was impeccable (and it felt very warm and sincere). The restaurant was not that big, but it had the perfect, cosy ambience.
I didn't take any photos that night. Well, that would give me more reasons to go back!

A quick summary of what we had that night:
Foie Gras
Sautéed duck foie gras with fig compote on apple, pecan and raisin crumble, emulsion of verjus and beurre noisette
Mushrooms Soup (This was my fav!)
Cappuccino of wild mushrooms with truffle infused scrambled eggs, asparagus and morel cream
Prawn & Crab Pasta
Homemade squid ink fettuccini pasta tossed in a pesto emulsion with crab meat and grilled tiger prawns, Arugula leaves and shavings of Parmigiano Reggiano
Duck Confit
Duck leg confit on a Savoy cabbage parcel stuffed with a fricassee of field mushrooms and foie gras, potato puree and Pommery mustard jus
Strawberry Crumble
Oven dried strawberries with sweetened crème fraiche and clotted cream on crumble dough with rolled oats and mascarpone sorbet
Chocolate Souffle

On a side note, I'm really impressed with the owners of Sage. They are a husband-and-wife team (both Singaporeans!), with the husband managing the kitchen while his wife takes care of the restaurant operations. Actually, I'm more impressed with the lady boss because she's handling every single task herself! She sent a sms on the day itself to confirm the reservation. She was taking orders from every table, and she personally attended to every table whenever possible!
